For dinner this evening, I made these Chicken Burrito Bowls and they were a hit! This healthy dish was super easy to put together but full of flavor! It was all the deliciousness of a burrito (minus the tortilla) in one simple dish!
Grilled chicken breast (seasoned with Adobo Seasoning, garlic powder, paprika, salt, pepper, olive oil).
Brown rice (I like Texmatti Brown Rice)
Canned black beans (Goya)
1 small onion
Shredded Cheddar Cheese
1 tablespoon Greek yogurt (sour cream substitute)
1. Prepare the grilled chicken breast using the seasonings above. Set aside once cooked.
2. Prepare the brown rice according to directions.
3. To prepare the Goya beans: Pour a tablespoon of olive oil in sauce pan. Sauté diced onion. Once soft, open can of beans and drain most of liquid (do not rinse). Pour beans in pan, add salt, pepper, garlic powder and cook on low stirring often until beans are semi soft (about 15 minutes).
4. In a round dish, prepare cooked ingredients and garnishes like the photo above!
